It’s a miracle! We’ve only managed to have chicken once this week after having it for meal after meal last week – oops! I’ve decided that the freezer needs a good clear out and so I made a list of everything we had in there and I’ve planned meals for the next two weeks making sure I use up a good bulk of the meat.
This week has seen some new little dishes come into play and hopefully you can take some inspiration from what we ate and put it to your own plate! Here’s week four of ‘What We Ate | The Meal Diaries’.
Monday – Turkey Chilli and Cauliflower Rice
Turkey mince is eaten almost as often as chicken in this house.. well, by me and Jamie anyway. Turkey chilli is a lovely alternative to a standard beef chilli con carne. It’s lean and super tasty. You’ve probably worked out by now that we find recipes we love and we tweak them to suit us and make them our own. Tonight’s recipe is courtesy of Dean Edwards and it’s a super yummy one! TOP TIP: I don’t grate the cauliflower into rice, it’s far too messy and takes way too long so I stick ours in a food blender and whizz it up with about 1/4 cup of water – done!
Tuesday – Dragonfire Beef Hache Bagel Burgers With Sweet Potato Fries & Broccoli
Oh boy was this yummy! Totally Jamie’s idea so I can’t take any credit for it. We had some ‘dragonfire’ burgers in the freezer that needed cooking so we decided that instead of normal buns we’d have them in toasted bagels with a bit of cheese inside too; my mouth is watering just at the thought of how good these were. We served them up with sweet potato fries and some broccoli – sadly no picture as I was too buys getting them in my belly!
Wednesday – Tuna Loin With Vegetables
Seafood is something we’re a little lacking in our diets really. We love it, but just kind of never get round to it so imagine my excitement when I realised I had two huge tuna loins in the freezer – they were definitely getting eaten. Tuna is so lovely because it’s not overly fishy and it cooks so quickly. I was going to do it on a bed of beansprouts and other stir fried vegetables but when it came down to it I honestly couldn’t be bothered and we didn’t have the right stuff in so I just went with veggies! I did add plenty of salt and pepper and a huge sprinkling of dark soy sauce which was amazing!
Thursday – Lean In 15 Chicken Pie With Filo Pastry
I was home for most of the afternoon so knew I’d have time to prepare a pie. This is Joe Wick’s Lean in 15 pie with filo pastry and it was so lush! I’m used to cooking a different meal for the boys but figured they’d eat this as they both love pastry and chicken. Let’s just say neither of them touched it and I was so disappointed because it was so nice. Turns out they’d rather eat a bowl of Weetabix with Nutella mixed in. Can’t win! Oh well, more for me next time…
Friday – Sausage and Bean Stew
I had totally intended to follow a super inspiring recipe for this but in the end I decided to make my own up and hoped it work. I have just been in the mood this week to clear our cupboards and fridge and freezer out so that we’re using everything up. I’ve even decided to order some baskets one of the cupboards to keep everything organised. Anyway! This was very much a ‘throw it all together’ job and it worked – yay, don’t you just love it when that happens!
Saturday – Bacon Wrapped Pork Medallions With Peppercorn Sauce, Mash & Broccoli
Tonight’s tea is totally inspired by the HelloFresh box I reviewed a while ago, we had all the bits in the house and I remember it just tasting so good (especially the peppercorn sauce!) and so of course, I made it again and it didn’t disappoint. Plates scraped and not one bit went in the bin!
Sunday – Cottage Pie With Vegetables
I actually made this yesterday ready for the boys to eat today as I’m away at an event in London and know I’m not going to be home in time. It was another throw it together recipe. It’s really bizarre because each time I make this, it’s always different. Sometimes I use a sachet for the sauce, other times I used chopped tomatoes and herbs, I guess it just depends what takes my fancy on the day!
Anyway, what have you eaten this week? I want to read some super inspiring meal ideas – maybe something I can tweak?
